Potato and mushroom nuggets with poached egg


Tasty, fast and easy to make, as side dish or as a standalone meal.


  • 800 g potatoes
  • 1 egg
  • 1 onion
  • 1 garlic clove
  • 1 baking powder
  • 1 tea spoon vegetable spices mix
  • salt
  • pepper
  • corn grits
  • bread crumbs
  • frying oil
  • 5 table spoons of dried mushrooms
  • parsley, fresh or dry

Cooking steps

Peel the potatoes, wash them and let them cook in salty water. Crush the dried mushrooms or grind them.
Chop the onions, garlic, and parsley.
When the potatoes are cooked, pour out the water, mash the potatoes, add the vegetable spice mix, chopped
onions, garlic, parsley, ground mushrooms, egg, baking powder and a few corn grits.
Mix until you get a nice and evenly combined mixture.
Form small nuggets or medallions, soak them in the bread crumbs mixed with some corn grits.
Fry them in oil so they get nice golden color.

Prepare poached eggs.
Serve meal
Serve the medallions/nuggets with the poached egg.
They're also great as a side dish with all kinds of meat.
